Tell us about DF Mexico, what did inspire you to open up a restaurant?
We had a very inspiring trip to Chicago and New York and came back brimming with ideas. We especially loved the way North American food from the States seemed to be taking inspiration from Mexico and vice versa. We loved that link. And my business partner had found an incredibly cool site in Shoreditch. The stars seemed to be aligned.
What is unique about the restaurant?
I don’t think you can find this kind of food anywhere in the UK, the LA/NY style Mexican fusion. But DF definitely doesn’t take itself seriously. It is a lot about just having fun.
How did you select the menu for the restaurant? and What is your signature dish that everyone has to try?
Trial and error and mainly purely by the dishes that we most wanted to eat. I think the tortas are great, as are the large tacos. For me the fish tacos and the ancho-rubbed mushroom tortas are both real favourites of mine. Quite light, quite healthy but utterly utterly delicious.
Why did you choose East London for the new restaurant?
The site came up and it seemed too good to turn down.
What would you say has been the most memorable experience while developing this business?
Surely our trip to Chicago? What a cool city, I had never been there before and loved every bit of it.
What are your future plans?
Tell God your plans and he will laugh at you! I have just started a new column in a Saturday magazine which is wonderful. I am ridiculously pleased to have somewhere to put my recipes and food thoughts down. I am working on a few ideas for TV but mostly I am just enjoying myself and my young family.
