Boxpark Shoreditch: Interview with Jonathan Simon Co-Founder of Pieminister

JonTristan_pieminister_5665G: Tell us about your business:

We are pie makers from Bristol. We make the best pies we possibly can, using the best British produce we can get our hands on.

We are all really passionate about food and pies in particular. I think it would be a great shame if we didn’t share some of our expertise with people and make the word a better place through pies.

G: Why is your business unique?

Isn’t everyone unique? Pieminister is a true reflection of myself and Tristan, bigger businesses cannot replicate that without it being hollow and without any integrity. We also really enjoy what we do that comes through in the pies, the shops, the staff and hopefully the customers can see that too.

G: Why did you choose Shoreditch for your new store? 

I love Shoreditch – have done before it was everso trendy! Boxpark is a really exciting thing to be involved in and I think it is truly visionary. I believe it will go from strength to strength….

G: What do you think will be the main challenges developing your business in Shoreditch and how are you planning to overcome them?

Getting people to come upstairs at Boxpark where all the food is located. As soon as people know what a great selection of food is available on the roof it will be packed.

pieminister_pie_boxG: What would you say have been your most memorable experiences while developing your company?

Opening in Borough market was a big one for us. We love borough and it’s a real privilege to be a part of such an institution. Not to mention be surrounded by such amazing food producers, its truly inspiring. Other than that opening our first little shop on Gabriel’s wharf (on London’s South bank) was very exciting too. Oh! And our first Glastonbury.

G: What were the main drivers of success in your company?

All the people who work here! Everyone at pieminister is really dedicated, hardworking and excellent at their jobs.. Without them we are nothing!

G: What does the future have in store for your company?

pieminister_pie_box2Hopefully we will open some more shops and continue to make it fun and innovative. Employ more people and carry on making the best possible food we can.

G: Who/what are your favorite CEOs/Businesses in Shoreditch?

There is loads of really cool business in the tea building. I come from a design background so love all the types of businesses in the area. If I wasn’t making pies in Bristol I would probably be working in Shoreditch doing something very similar to them. I met the guys from We love mobile the other day… they are a nice bunch!

In Boxpark our neighbors are all very nice and the guys running the show are all really nice too…
