A bubble waffle is a Hong Kong street snack, known there as an egg waffle. The batter is cooked in a mould of small round cells, so the waffle comes out as a sheet of crisp-edged bubbles that can be torn off one at a time. In London it is usually rolled into a cone and filled with ice cream, fruit and sauce.
